About the Chef

Hello,

My culinary background started in 1989 with the Air Force National Guard in Chicago, IL.,  as a journeyman. After working my way up the echelons I became NCOIC (non-commissioned officer in charge) of my units food services section and served in this post for 3 1/2 years.

During this time frame, I also attended Kendall College (at the time located in Evanston, IL., but now located in the North side of Chicago, IL.), where I earned an AAS (associates in applied sciences degree) in the Culinary Arts.

As I attended Kendall College I also apprenticed at The Union League Club (a very prestigious club) in the heart of the Windy City. I can remember how proud I was to have the opportunity to make Baryshnikov's caesar salad among many other dignitaries and famous guests. What a challenge and immense experience it was to have been employed at this fine establishment.

After spending some time in Chicago gaining experience, I decided it was time to make a move to yet another fine city. The great city of food-San Francisco (1998). With over 5000 restaurants San Francisco was truly a young chefs delight. This is where I started my own catering business. Canuck Culinaire (yes I am Canadian) and was able to work for many wonderful clients.

While I catered I also took a job at the San Francisco Culinary Academy where I was able to work under many talented chefs and Master Chefs. During my employment there I was fortunate enough to work with a talented and experienced butcher by the name of "Butcher Bob" Fanucci. He taught me the ropes about meats, poultry, seafood and wild game. What a fine man he was. A mentor of sorts. After about two years I crossed over to the Garde Manger (cold foods) department where once again I was fortunate to work with several fine chefs. Before I departed San Francisco I was able to gain knowledge in all arenas at the Academy.

After a six year stint in San Francisco I moved to Palm Springs, California (2004). While here in Palm Springs I took some time off from cooking and pursued another passion as a personal trainer. Certified through the National Academy of Sports Medicine I have managed to aquire a number of clients at World Gym. Since, I have also started a supplement business.

My attendance at the Culinary Business College in Albequerque, NM in April 2007 started my return to the cooking field. Here I obtained a certificate as a personal chef. Along with Personal Chef Services I also am beginning to teach Interactive Cooking Classes and Interactive Dinner Parties through Culinary Inspirations.
