Weekly Recipes Compliments of Your Personal Chef May 5th, 09
Hello,
I'm sure as kids we all have favorite foods that bring back memories. Things that mom or grandma made just special for you. Now it's your turn to make that special treat for your children or grandchildren. Here is a recipe from my past that I tweaked and made easier. So enjoy! Remember to check in next week when I have a great beef recipe! MMMMM....
Tapioca
6 oz. Dried Large Tapioca Pearls (Not instant)
1 Tbsp. Pure Vanilla Extract
1 C. Sugar
3 Eggs, Separated
4 C. Milk
The easiest way is to begin with soaking the pearls in cold water over night. If you don't have that much time to spare, soak the pearls in warm water for about 30-40 minutes. Once they are finished soaking, drain the pearls and set aside. In a large saucepan add 3/4 c. sugar, milk, and pearls. Place the pan on medium, bring to a boil, then reduce the mixture to a simmer for about 20-30 minutes. Or until the pearls become translucent.
Next quickly whisk the egg yolks and 1/4 c. sugar together. Then slowly ladle the milk mixture into the egg mixture while continuously stirring. This might take a special helper to accomplish this task. Basically what you are doing is tempering the eggs so that when you add the egg mixture into the hot milk they do not become scrambled eggs. That would be awful and you would have to start all over again. Once you have tempered the eggs with about 1/2 c. of the warm milk slowly. Slowly re-add the milk/egg mixture into the hot milk/pearl mixture. Once the egg mixture has been add allow it to simmer for another 30 seconds to 1 minute. Then remove from the heat.
While the mixture is simmering, beat only 2 egg whites to a lightly fluffy stiff peaks. Then once they are finished, slowly fold the egg whites into the hot mixture. Next slowly fold in the vanilla extract. Serve warm or cold, maybe with a little whipped cream for an even bigger smile! Bon Appetit!

What Is a Personal Chef?
You may find yourself wondering two things. The first would be “what is a personal chef anyways?”, the second would be “could I afford a personal chef, their only for the rich.” That’s not true. A personal chef has numerous clients to plan and cook meals for on a weekly basis, at a reasonable price. As your personal chef, we have one consultation meeting, where I meet you at your house, and we sit down and discuss what meals/recipes that you would like to have, and the estimated cost of groceries.
Then Chef’s Delight does all the rest for you! I create your menus for the week, a personalized shopping list, shopping for the freshest ingredients. I then will prepare these gourmet meals, either in your kitchen or mine. Next I clean up the kitchen, and leave it exactly how I find it. These meals are packaged, and delivered ready-to-eat or fresh/frozen with heating instructions included. Thru the end of October 2007, all first time customers receive 25% off their first Personal Chef cooking experience! You may even decide that you just want to try out my service, without having to do a lot of meals. I can do a first time trial of only 2-3 meals. Or would you like to give this service to a friend, I also have gift certificates ranging in all price ranges and amounts of meals!
I am currently teaching weekly cooking classes. Do you want to have a fun, relaxing evening, and learn how to make delicious food? I can come to your house, and teach you and a group of 2-3 of your friends, for a few hours every week. The classes are scheduled for 6 weeks, one day every week. Just think what fun it would be to learn how to make some of your favorite dishes from your favorite restaurant! I am currently enrolling students and hosts for Begginers, Advanced, and International Classes. As an added bonus to the host, if you decided to host a cooking class in your home, you pay nothing for the class. You only need to pay for your own food supplies. The class cost $200 per person for 6 weeks, up front. This includes a recipe book for the recipes that we will prepare, approximately 18 hours of class, and learning new and exciting recipes with a Certified Chef. What areas do I cover?
Chef’s Delight covers all of Licking County, which is the second largest county in the state, and Franklin County (For a .42 a mile driving fee)! I will also come and cook just for you in other counties for a small fee (to cover driving fees).
How are my prices determined?
Chef’s Delight prices are based on a chef’s fee plus the cost of your groceries. Our in-home consultations are no charge to you.

I have an Associates Degree in Culinary Arts from Johnson and Wales University, which is the number one Culinary School in the Nation.

I am ServSafe Certified (this means that I have taken hours of courses in proper sanitation, and I have learned all about viruses, etc,... and how to prevent them from making you and your loved ones sick!)
I am a Certified Personal Chef thru the Culinary Business Academy

I have worked in the Culinary Field (Restaurant Business) for over 8 years

My Bio:
Here's a little bit about me. I have been working in a restaurant kitchen since I was 15 years old, and have been creating recipes since I was 7 (I won a children’s recipe contest). I have also been cooking with my mother since I could stand (most times I needed a step stool just to see the counter top), you wouldn’t always call it cooking, or edible at that age!
I started working at Cherry Valley Lodge in Newark Ohio, when I was 15. I did whatever I could do there, which included banquet prep, pastry, banquet stations, pantry station. I created a few cakes for tea parties and charity auction events. I helped to create desserts for wine dinners with then Sous Chef Brandon Wahl, and made those beautiful dessert trays for the customers in the dining room. Chef Kevin even thought it would be funny to put me out on the biggest and hottest grill that I had even seen (at the time), in front of a group for a BBQ, for my very first time (in the middle of summer!).
When I graduated from Newark High School, I went to Johnson and Wales University in North Miami Florida, where I received my Associates Degree and was on the Dean’s lists almost every trimester. From there I had my co-op with P.F. Chang’s China Bistro at Easton and worked my way thru their prep kitchen and line, and also became the only woman on the coveted wok station! I got promoted from cook, to National Trainer where I opened 5 new restaurants. Then shortly after I graduated from Johnson and Wales, I went back to P.F. Chang's and was promoted to Supervisor. A few months later, I was promoted to Sous Chef, and was moved to Des Moines Iowa, and next in Madison WI., where I resided for 7 months.
After moving around the country since I was 18 I have decided to re-settle in Granville Ohio, where I now live,with my two cats. I am continued my education in the culinary field thru the Culinary Business Academy, and became a certified Personal Chef. I created and run Chef's Delight, A Personal Chef Business.
I am ServSafe Certified, a member of the United States Personal Chef Association, have an Associates Degree in Culinary Arts, and am now a Certified Personal Chef thru the Culinary Business Academy and the USPCA. I will sit down and work with you and your schedule to prepare delicious gourmet meals.

Day 1:
Boursin, spinach, and tomatoes stuffed chicken breast, with a side of spinach empanadas, and mushroom couscous.
Day 2:
Homemade chicken and goat cheese ravioli, served with Extra Virgin Olive Oil, pine nuts, sundried tomatoes, spinach, and freshly grated parmasen, and a side of steamed vegetables.
Day 3:
Spicy pork loin with an apple salsa, served with Spanish rice, and steamed vegetables.
Day 4:
Chicken fajitas, with fresh salsa, tomatoes, lettuce, onions, and sour cream, served with Spanish rice, and refried beans.
Day 5:
Kung Pao Chicken with fresh steamed vegetables, and white rice.
Dessert:
Homemade ice cream sandwiches: A double chocolate chip cookie with a caramel pecan ice cream, or any combinations that you could think of I can make!

Price: $250 plus groceries Serving Size for each dish is based on a single person. For a couple there would be 6 servings of each, and for a family of 4 there would be 8 servings, so on and so forth.

**Fees do apply for each person extra in the "family of four" package, each extra person is $25 more.

5 Casseroles which will serve between 4 to 6 people each.

Extras: Each extra side is $10 per side, and can be substituted for a dessert for the same price. Also a salad can be substituted for a soup or side. A soup or stew can be considered as an entrée. I can also provide entrée only plans if you prefer to make your own sides, reduces the fee by $50.
Payment: Chef fee and grocery deposit are due in full prior to date of service; cancellations notice must be received by the chef at least 4 days before scheduled cooking date. If this does not happen it is a $50 cancellation fee, that will be charged. What is a Personal Chef Service?
A Personal Chef is a chef that has numerous clients, and cooks weekly meals for each a reasonable price. A Personal Chef isn’t for the extremely rich anymore, it’s for everyday people who are too busy to spend 15-20 hours a week to prepare and clean up after meals. I will consult with you, and discuss what weekly meals you want, and estimate the cost of your groceries. I then create menus for you, personalized shopping lists, go grocery shopping, prepare meals, clean-up, package those meals, and deliver them with typed re-heating instructions. Do you do have other services?
Yes, I have a 6 week in-home cooking classes, for groups of 3-4. If you host a cooking class at your home the class is free! I also do special events, and small dinner parties for up to 13 guests. What if I am trying to lose weight or am on a special diet?
When I sit down and consult with you, we will discuss what foods you enjoy, or what recipes you would like me to use for that week. Then I will take those meals, or recipes, and will change the recipes/meals to be healthier for you. I have nutrition training from my culinary degree, which will assist me to create gourmet and delicious meals, so you can eat right and lose weight.

It comes out to an average of 15-20 hours a week that Chef’s Delight will save you! Now you can go out and do the things that you really want to do with your extra time!
